I received this Olive tree as a Christmas gift, it has been topped badly and I'm really not sure what to do with it. Any suggestions would be greatly appreciated. Thanks Andrew 

First of all you need to decide for a trunk line. Then carv out wood of the trunk until it has a smooth transition to the new leader.

but since you got it so recently, my suggestion is doing nothing for a year or so. Just make sure you keep it alive and healthy, meanwhile start to think about your future design.
