How to care and manage Moringa

Hi,
I have been casually working on a few trees. I mainly like to work with fruiting or somewhat edible trees.
I planted some Moringa seeds last year. They grow very fast and I decided to let one grow as it likes, while I experiment with pruning 3 of them into various bonsai-like forms. I am looking for advice on how to care and manage them. I pulled the three little trees out and made a stab at root trimming them - The roots are very strange (thick and raddish-like. I was nervous that I would kill the trees but they seem to be coming back to life after the shock. Still, I would love some guidance. Any ideas?
