The design phase starts with shosing suitable materials to work on. What you have at hand is materials that most experienced bonsai artists would not concider working on.

With all the growth that high up literati style is your only option short term.

I think I agree with Tropfrog, however, depending on how flexible the trunk is it may be possible to put some movement in it. You need to fd someone who can help you where you live as you sound as if you are not experienced with styling trees. Find a club and buy a book, and go from there.

I don't know how to define "experienced". We've been doing this for a few years and I'm confused about what to do with these particular trees. Anyone who can help please give me their opinion.

Based on the pictures my recomendation is to make a literati style bonsai.

I do not know any way to simplyfy that more. A googling for literati style bonsai may help you understand it better.
